    Default Fish with Pan-fried Vegetables Recipe

    Ingredients:
    Fish Fillets - 4
    Olive Oil - 2 tblsp
    Pepper as per taste
    Oregano Powder - 1 tsp
    Salt to taste
    Mixed Vegetables - 2 cups (combination of zucchini, capsicum, cherry tomatoes or any other vegetables)
    Pepper to taste

    Method:
    1. Sprinkle salt on the fish fillets and keep aside for 10 minutes.
    2. Heat the oil in a pan and sprinkle the pepper powder and pan-fry the fillets on both sides till light golden in colour but not overcooked.
    3. Remove and keep warm.
    4. In the same pan add the vegetables and stir-fry for 2-3 minutes till they are tender.
    5. Place on the fish fillets and serve with mashed potatoes.
