    •Chocolate sponge cake 12 slices
    •Unflavoured gelatine 1/2 tablespoon
    •Thick cream 1 cup
    •Powdered sugar 1/2 cup
    •Egg yolks 3
    •Sugar 1/4 cup
    •Instant coffee powder 2 tablespoons + 2 teaspoons
    •Mascarpone cheese 3/4 cup
    •Chocolate curls to decorate
    Cut each slice of cake in half. Dissolve the gelatine in three tablespoons of hot water. Whip the cream with powdered sugar till stiff and set aside. Whip the egg yolks with sugar and one tablespoon of water in a double boiler, or in a heatproof bowl over a pan of simmering water, till the mixture forms thick ribbons. Set aside to cool.
